Fermentation
Cold maceration for 5 to 7 days. Alcoholic fermentation is carried out with native yeasts in stainless steel tanks during 7 to 10 days. Temperature fluctuates between 26°C and 28°C depending on the parcel grapes come from. Post-fermentation maceration takes place for 5 or 7 days and malolactic fermentation is totally spontaneous.
Aging
Aged in French and American oak barrels for 6 months. Part of this wine, around 15%, is not aged in oak but kept in the tank to preserve its aromas of red fruits and spices.
Tasting Notes
Intense ruby color with a fruity and spicy style. Aromas of fresh fruits, herbs, pepper, and clove are perceived on the nose. Scents of coffee, tobacco, and chocolate from the oak-aging process also take precedence. This is a complex and interesting wine, with great acidity, intense tannins, and good persistence in the mouth.
