Vizcaya Rum Cask 21 VXOP
Vizcaya Cask 21 VXOP, our first in the Vizcaya family, was chosen to represent the classic aged and rare rums of Cuban heritage. The base rum is comprised of 15 year to 21 solera aged rums from the select finest sherry casks. The finishing touch includes an added measure of imperial style 30-year-old rum to give the Cask 21 VXOP it’s complex weaving of flavors and characters. The resulting product is akin to an XO cognac estate and meant for the ultimate enjoyment and for true connoisseurs.
Our innovative and unique triple aging process arises from an adaptation of the traditional Spanish method of soleras. We use a multiplicity of carefully selected sugarcane distillates of fresh sugarcane juice, which are hydrated, aged, and formulated to become mother rums, the backbone of our artisanal production.
All our rums are considered craft, artisanal and unique in character and aged in care of our stock cellars.
At least twice a year the Mother Rums that will be used for the following year are selected, with up to 75% of the corresponding hearth being extracted from the barrels.
VISCAYA Rum was reborn in the 1970’s and has sold in the new design and style of the classic CUBAN fine aged rum since 1996. Each of the range is aged in special chosen barrels and the blended amongst the various ages of aged solera rums in order to bring out the best of the traditional style and character.
